Fried Chicken Wings
· 3 tablespoon oyster sauce
· Salt & Pepper Pepper to taste
· 6 chicken wings
· 1cup cooking oil
Mix well all the ingredients. Marinate chicken for atleast 4hrs or overnight with the sauce.
Heat frying pan and put the oil. Fry each side 3 minutes in medium heat.
Spaghetti
· 5 tablespoon olive oil or cooking oil
· 1/4 cup onion, finely chopped
· 5 cloves garlic, finely chopped
· 400g minced beef
· 4 cups tomato sauce
· 5 tablespoon italian herbs
· 1/2 cup sweet chilli sauce
· 2 tablespoon condensed milk
· 1/2 cup green bell pepper, finely chopped
· 1/2 cup green carrots, julienne
· 1 cup sausages, chopped
· 1 cup mushroom, chopped
· 1/4 cup grated Parmesan cheese
· Salt & pepper to taste
· 500g spaghetti pasta
· 1/4 cup butter
Cook pasta for 10 to 12 minutes in boiling salted water. Wash and drain well. Mixed with butter. Set aside.
Saute garlic and onion with olive oil. Add beef, herbs and saute for 5 minutes. Pour totato sauce, sweet&chili sauce and stir it well. Let it boil for 10-15 minutes. Add carrots, sausages, mushrooms and condensed milk. Simmer for 5minutes. Add green bellpepper and cook for 5 minutes. Add salt and pepper. Keep stirring and boil for 5minutes.
Put pasta on the plate and pour the sauce. Garnish with cheese. Serve immediately.
Bulalo
· 1 onion
· ½ kg oxtail, chopped into serving pieces
· 10 pcs string beans, cut into 2 pieces each
· 1 piece carrot, sliced into 6pcs
· 1 piece potato, sliced into 4pcs
· 1 cup cabbage, chopped
· 1 tablespoon whole pepper
· 6 cups water
· Salt and pepper to taste
· optional 1 tablespoon fish sauce
Boil oxtail in water, pepper and salt for 60minutes or 30 minutes using pressure cooker. Add onion. Boil for 15mins. Add carrots. Boil for 5 mins. Add potatoes. After 5mins, string beans and beans. Simmer until the meat is tender.
Serve with rice.

Grilled Shrimps with mango sauce
Last Tuesday, we had a business meeting at Raffles Yacht Club and I ordered something like this dish. I liked the interesting blend of butter and mango.
12 pcs shrimps
1/2 cup butter
1 ripe mango, peeled and diced
3 cloves of garlic, chopped into fine cubes
salt & pepper
Grill shrimps with pepper and salt in a grill pan.
In separate non-sticky pan, heat butter in low heat, add garlic and saute. Saute for 2 minutes. Add the mango, salt and pepper and mix well. Do not over cook. Cook for 2-3 minutes.
Serve with rice.

Crab Soup with Noodles
· 1 onions
· 1/4 cup ginger
· 1 watercres
· 1-2 pcs crab
· 2 tsp patis (fish sauce)
· cooking oil
· 5 cups water
· 100g rice vermicelli noodles
· Salt and pepper to taste
In a casserole, sauté ginger then add onion. Add water and lower the heat. Let it boil for 10mins. Add crabs. Cook for 10 minutes. Add noodles and fish sauce. Let it boil for another 5minutes. Then add watercress, salt and pepper. Cook for another 5 minutes.
Turon
· 10 pcs. ripe banana
· 1 pack big size spring roll wrapper
· 1/2 cup brown sugar
· 1/2 cup fresh langka(jackfruit)
· cooking oil
Trim both ends of each banana and peel off skin, cut into half lengthwise keep aside. Cut langka into strips and keep aside.
In a plate place one piece of spring roll wrapper and place on top 1 slice of banana rolled in sugar. Add on top the strips of langka. Roll lumpia wrapper halfway, fold both ends, now fully roll.
Heat non-sticky frying pan and oil in low medium to high heat fry banana rolls in batches 3-4 minutes each side or until lumpia skins are crisp, golden brown. Remove banana rolls from wok and drain excess oil.
Serve with cola while the skins are still crisp.

French Tomato Soup
When we went to Paris, we tried an authentic French soup and it tasted really nice and was healthy at the same time.
The ingredients
· 5 ripe fresh tomatoes
· 2 cloves of garlic
· 2 onions(white)
· 2 leeks
· 2 carrots
· 2 celery
· 1/4 cauliflower
· 1 small greenbell pepper
· 1 1/2 cup tomato sauce
· 5 cups of water
· 1 chicken broth
· 1 teaspoon basil
· 2 pcs drined bayleaf
· 2 tablespoon butter
· 2 tablespoon olive oil
· 1/3 teaspoon sugar
Peel and de-seed the tomatoes. For easy peeling, you can put them in boiling hot water for a moment. Wash with cold water and peel.
In sauce pan fry gently in the olive oil and butter the onions.
When they are soft, add water, tomato sauce, tomatoes, basil, bayleaf, garlic, leeks, carrots, cauliflower and celery. Simmer very gently for 10 minutes.
Add water and salt, pepper and greenbell pepper. Simmer for a further 15 minutes.
Serve with parmesan to sprinkle on top.

Herb Baked Chicken
· 1 whole chicken
· 2 teaspoons dried basil
· 2 teaspoons italian herbs
· 1 teaspoon oregano
· 2 teaspoon salt
· 1 teaspoon pepper
· 1 teaspoon paprika
· 3 tablespoon olive oil
Wash chicken and dry skin using paper towel. Rub oil, salt and pepper. Rub all the herbs. Wrap the chicken using cling wrap or zip lock. Refrigerate for 2 to 4 hours. Bake at 180°C or 45-60 minutes each side.

Banana Fritters
Our family loves banana. And I'd like to share one of our banana dessert menu.
· 1 1/2 cups flour
· 1 teaspoon baking powder
· 1/4 teaspoo baking soda
· 1/4 teaspoon salt
· 1 egg, beaten
· 1 cup water
· 4 firm bananas, cut into 4 and pressed
· 5 cups vegetable oil (for frying)
Dip:
· 3/4 cup water
· 1 cup white sugar
· 1 cup cream
In a bowl combine egg, flour, baking powder, soda and salt. Gradually blend in the water and beat with whisk until smooth.
Heat oil in a large skillet over high heat. Dip banana pieces in flour water mixture, coating well. Cook 4-6 pieces at a time until golden brown, about 2-4 minutes. Drain using paper towels.
Heat not-sticky pan, put water and sugar at the centre. Let it boil until carmelized. Once it's carmelized add cream and mix.

Farmtown Addiction
I was addicted with a Facebook game called Farmtown. I started my farm in 5th August 2009 and after a month, 5 September 2009 i reached the last level where i could buy a mansion worth 1million. During my first week of playing the game, i slept after 1am everyday.
The concept of the design is like my dream land. It's a beach resort with a farm.

Chicken Carbonara
· 1/4 cup butter
· 1 cup cream (nestle cream 170g)
· 2 cups evaporated milk
· 5 slices of bacon (grilled and cut in strips)
· 200g chicken breast (grilled and cut in cubes)
· 500g fettuccine (or spaghetti)
· 1/2 cup green peas
· 1/4c. grated Parmesan cheese
· Salt & pepper to taste
Grill chicken for 8-10 minutes each side and cut into cubes. Grill bacon for 2-3 minutes each side and cut into strips. Set aside.
Cook pasta for 10 to 12 minutes in boiling salted water. Wash and drain well. Set aside.
Saute garlic and onion with butter. Add chicken and saute. Pour evaporated milk and mix it well. Let it boil for 5minutes. Add cream, bacon, cheese and green peas. Add salt and pepper. Keep stirring and boil for 5minutes.
Put pasta on the plate and pour the sauce. Garnish with bacon and cheese. Serve immediately.

Shrimp wrapped with noodles
Pork Pochero
· ½ kilo lean pork, cut into serving pcs.
· 4 tbsp. Olive oil
· 4 cloves of garlic, chopped
· 1 onion, chopped
· 2 potato, cut into serving pcs.
· 3 saba or plantain banana,, sliced diagonally
· 1/2 carrot, cut into serving pcs.
· 10 string beans, cut into 2
· 5 Pechay or Chinese white cabbage, cut into 2
· 1 1/2 cup tomato sauce
· 1 pc.bayleaf
· 4 tbsp. black soy sauce
· salt & pepper
Boil pork with salt, bay leaf, pepper and soy sauce for 15-20mins. Set aside.
Fry potatoes and banana. Set aside. In the same pan, sauté garlic until light brown then adds onion. Sauté for a few minutes. Add pork, tomato sauce and stir well. Add carrots. Boil for 5mins. Add potatoes, string beans and pechay and simmer for 5mins. Add banana and simmer for 2 mins. Add salt and pepper to taste.
Enjoy and serve with rice.

Cassava Cake
- 4 cups grated cassava – thawed and drain the juice
- 2 cups grated cocunut
- 2 eggs, well beaten
- 1 cup brown sugar
- 1 cup coconut milk
- 1 cup condensed milk
- 1/2 tsp salt
- 2 tbsp olive oil
- Grated cheese
- 1/2cup brown sugar
- 1/4 cup condensed milk
- 1/2 coconut milk
Cook brown sugar, condensed milk and coconut milk in low medium heat. Stir until thick and pour over cassava cake and bake again.
Topping 2 (last layer)
- 2 tbsp plain flour
- 1/2 cup condensed milk
Blend flour and condensed milk in a pot. Stir over low medium heat until thick and pour over cassava cake and bake again.
Pre-heat the oven to 350F. Mix grated cassava and coconut. Add sugar, condensed milk, coconut milk, egg and mix well. You can use food processor or heavy duty blender to mix all the ingredients.
Spread olive oil in the baking pan. Pour the mixture. Bake for 45 minutes. Pour the topping 1 and bake for 10 more minutes. Pour the topping 2 and bake for 10 more minutes.
Serve with grated cheese on top.
Cassava Suman
- 1 kilogram grated cassava (tapioca)
- 500 grams grated young coconut
- 1 cup coconut milk
- 3/4 cup brown sugar
- banana leaves
Pass the banana leaves over fire to make it easy for folding later.
Squeeze grated cassava to extract water from it. Mix cassava, coconut and brown sugar. Put 2 spoonful of cassava mixture and wrap each with banana leaf and fold each side. Lay the wrapped mixture in a saucepan with water and cook for 30 minutes.
This can be served either hot or cold.
