2 tbs olive oil
1/2 cup onion, finely chopped
2 garlic cloves, finely chopped
3 cups (about 3 large) tomatoes, peeled & chopped
2 tbs tomato paste
2 tbs sugar
3 tbs fresh basil, finely chopped
3 tbs fresh parsley, finely chopped
salt and pepper to taste
1) Heat olive oil in a large saucepan over medium-high heat. Saute onion and garlic. Add remaining ingredients. Reduce heat to low and simmer, covered, until tomatoes are very tender, about 15 to 20 minutes; stir occasionally. Cool 5 minutes.
2). Serve over fresh pasta
